Air Mail |

Ingredients
• 2 ounces golden rum
• 1/2 ounce lime juice
• 1 teaspoon honey
• 5 ounces Brut champagne
Preparation
Mix thoroughly with cracked ice in a chilled cocktail shaker, and then pour unstrained into Collins glass. Fill with champagne. (We recommend using Puerto Rican rum.) |

Atomic Cocktail |
|
Ingredients
• 1 1/2 ounces vodka
• 1 1/2 ounces brandy
• 1 teaspoon sherry
• 1 1/2 ounces Brut champagne
Preparation
Stir the vodka, brandy,* and sherry** well with cracked ice, then strain into a chilled cocktail glass and add 1 1/2 to 2 ounces cold brut champagne. Garnish with plastic three-eyed fish from Simpsons playset. |

• 1 1/2 ounces brandy
• 1 1/2 ounces Benedictine
• 1 1/2 ounces Cointreau
• 4-6 ounces Brut champagne
Preparation
Combine the brandy,* Bénédictine, and Cointreau in an Old-Fashioned glass. Top off with room-temperature brut champagne. |

Ingredients
• 1/2 ounce cognac
• 1 teaspoon Grand Marnier
• 4 ounces Brut champagne
Preparation
Pour cognac (or another brandy) and Grand Marnier into a champagne flute, top up with brut champagne and serve. |

• Guinness stout

Preparation
Half-fill a Collins glass with stout and top up slowly with champagne. Stir gently with glass or plastic rod. |

Champagne Cocktail |

• 3 dashes bitters
• Brut champagne
• twist of lemon(s)
Preparation
Place a sugar cube* in a chilled champagne flute, lash it with 2 or 3 dashes of bitters (Angostura or Peychaud's), fill the glass with brut champagne or other, cheaper, bubbly (peasant!), and squeeze a lemon twist on top.

Ingredients
• Brut champagne
• 1 1/2 ounces brandy
• 1 1/2 ounces Cointreau
• 1 bottle club soda
• Rind of 1 orange(s)
• Slices of pineapple(s)
• Slices of orange(s)
• mint
• strawberries
Preparation
In a punch bowl, deposit the ingredients and a berg of ice. Decorate with sliced fresh pineapple and orange and plenty of fresh mint. Crushed fresh strawberries add a gala touch, plus some flavor.

• 1 1/2 ounces absinthe
• 4 ounces Brut champagne
Preparation
Pour absinthe into a champagne flute and add iced brut champagne until it clouds up -- at least 4 ounces.

• 2 ounces London dry gin
• 1 teaspoon superfine sugar
• 1/2 ounce lemon juice
• 5 ounces Brut champagne
Preparation
Shake well with cracked ice in a chilled cocktail shaker, then strain into a Collins glass half-full of cracked ice and top off with champagne.

Ingredients
• 2 ounces orange juice
• 4 ounces Brut champagne
Instructions
Fill champagne flute 2/3 full (or 1/3, for Anglophiles) of fresh-squeezed orange juice and top up with brut champagne.
